One of my preferred fast breakfasts is Avocado Toast with Grated Eggs. It’s a whole meal with whole grain bread; it’s smooth with a ripe avocado, and it’s made zesty with lemon juice.
When I add freshly grated eggs on top, I’m not just making it pretty; I’m adding a significant amount of protein. I also drizzle it with a little olive oil, just because I can.
It really does make the flavor pop. And if I had to admit something, I probably add too much salt and black pepper.

1. Toast the slices of whole-grain bread until they are golden brown and crispy. Set them aside.
2. When the toasted bread is just about ready, take a ripe avocado and cut it in half. Remove the pit and scoop the flesh into a bowl. Once the toast pops, place half the mashed avocado on each slice. Sprinkle salt and pepper on top, to taste.
3. Combine the avocado and lemon juice, mashing them together with a fork until your mixture achieves the smooth creaminess of a traditional guacamole. This, of course, is not guacamole. But it’s good—and it’s good for you. Serve it right away, with a nice sprinkle of salt and pepper.
4. In a non-stick skillet set over medium heat, warm olive oil. Crack open eggs and carefully pour them into the skillet. Fry the eggs until they’re about as done as you prefer, which for me is about 10 minutes, so that the yolks are just this side of well-done. I don’t really like creamy yolks. You may, though.
5. After the eggs have been cooked, move them to a bowl of cool water to lower their temperature, then strip off their shells.
6. Using a fine grater or microplane, grate the hard-boiled eggs into a separate bowl.
7. Evenly spread the mashed avocado mixture on top of the toasted bread slices.
8. Grate a lot of egg on top of each slice.
9. Add extra salt and black pepper to taste to the grated egg.
10. If desired, top with red pepper flakes and chopped chives or parsley. Serve right away.
