  • 1 medium beetroot about 6 to 8 oz
  • 1/2 cup pomegranate seeds (arils)
  • small handful fresh parsley about 1/4 cup packed
  • 1 inch piece fresh ginger root

How to Make this

1. Gather and rinse everything: 1 medium beetroot (6 to 8 oz), 1/2 cup pomegranate seeds, about 1/4 cup packed parsley leaves, and a 1 inch piece of fresh ginger. Wear gloves if you dont want beet stains on your hands.

2. Scrub and peel the beetroot, then cut into roughly 1 inch chunks so it blends or juicers easily.

3. Peel the ginger (or just scrape the skin with a spoon) and slice it thinly.

4. Strip the parsley leaves from the thicker stems and loosely pack about 1/4 cup. Rinse and shake off excess water.

5. If you have a juicer: feed ingredients in this order for best flow: parsley first, then pomegranate seeds, then beet chunks, finish with ginger to help push everything through. Collect juice and skip to step

6. If you only have a blender: place beet chunks, pomegranate seeds, parsley, ginger and about 1/2 cup cold water in the blender. Blend on high until very smooth, adding a splash more water if needed to move the blades.

7. Strain the blended mix through a fine mesh sieve or nut milk bag into a pitcher, pressing or squeezing the pulp to get all the juice out. Compost or save the pulp for smoothies or baking.

8. Taste and chill: pour over ice or refrigerate for 10 minutes, garnish with a few pomegranate arils or a parsley sprig if you want. Drink fresh for max nutrients, or store in an airtight jar in the fridge up to 24 to 48 hours, shake before drinking.
